I have a brand new indoor pool that is approximately 25x40 in the Catskills (Upstate New York). We keep the water at about 84F and the indoor temp at about 78F. We have (2) outside dampers that open and then bring on two exhaust fans to ventilate the room (70x50 w/ 17' ceilings) when the indoor R.H. reaches 70%. There is an outdoor humidistat that shuts this down if the outdoor R.H. is above 85%. We also have a 3-ton hydroair system with underground ductwork running along the perimeter blowing out of the floor under windows. We also have a 7.5 ton straight a/c system with a high supply/ low return setup on one gable end wall. What do you think of this set-up/design? What could we do better/ different?

Your system should work well when the outdoor dew points <50^F. High outdoor dew points with moderate weather leaves the inside wet. A couple days of damp weather may be ok. A wet week or two will be a problem without a method of drying. Your concept is ideal for arrid climates like Arizona.
Covering the pool with plastic and Hi-Dry 195 Vehere could be a solution for occasional extended high dew point conditions. http://www.thermastor.com/prod_poolspa.htm
